Inside-Out Chinese Spring Roll Salad

Ingredients

  • Black sesame seeds
  • 1 tsp. minced garlic
  • 1 tsp. minced fresh ginger
  • 1 tsp. soy sauce
  • 1 tbsp. sriracha sauce
  • 1 tbsp. plum
  • 1 tbsp. sesame seed oil
  • 2 tbsp. lime juice
  • 1 green onion, thinly sliced
  • 1 carrot, peeled and chopped into matchsticks
  • 4 radishes, thinly sliced
  • ¼ cup chopped cilantro
  • ½ cup sliced water chestnuts
  • ½ cup chopped red pepper, cut into matchsticks
  • ½ cup peeled and chopped cucumber
  • ½ cup bean sprouts
  • 1 cup chopped baby corn
  • 1 cup chopped radish leaves
  • 3 cups shredded green cabbage

Directions

In a large bowl combine veggies and toss lightly. In a separate small bowl, whisk together lime juice, sesame oil, plum sauce, sriracha, soy sauce, minced ginger and garlic. Pour mixture evenly over salad in large bowl; toss lightly to combine. Sprinkle with sesame seeds when serving.
